Ingredients

- 1 cup cooked quinoa
- 1/4 cup unsweetened cocoa powder
- 1/4 cup pure maple syrup
- 1/3 cup nut butter (almond, peanut, or cashew)
- 1 tsp pure vanilla extract
- 1/2 cup dark chocolate chips
Instructions
- Cook quinoa according to package instructions, let cool for 10-15 minutes.
- In a large bowl, combine cooled quinoa, maple syrup, nut butter, and vanilla extract. Mix well.
- Gently fold in cocoa powder until combined.
- Add dark chocolate chips and mix thoroughly.
- Shape the mixture into small balls (about one inch in diameter) and place on a parchment-lined baking sheet.
- Refrigerate for at least one hour to set before enjoying.
Notes
For a nut-free version, use sunflower seed butter. Store in an airtight container for up to a week in the fridge or three months in the freezer.
