Description

Delightful chocolate treats made with quinoa, perfect for a guilt-free snack.


Ingredients

  • 1 cup cooked quinoa
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup pure maple syrup
  • 1/3 cup nut butter (almond, peanut, or cashew)
  • 1 tsp pure vanilla extract
  • 1/2 cup dark chocolate chips

Instructions

  1. Cook quinoa according to package instructions, let cool for 10-15 minutes.
  2. In a large bowl, combine cooled quinoa, maple syrup, nut butter, and vanilla extract. Mix well.
  3. Gently fold in cocoa powder until combined.
  4. Add dark chocolate chips and mix thoroughly.
  5. Shape the mixture into small balls (about one inch in diameter) and place on a parchment-lined baking sheet.
  6. Refrigerate for at least one hour to set before enjoying.

Notes

For a nut-free version, use sunflower seed butter. Store in an airtight container for up to a week in the fridge or three months in the freezer.
