Ingredients

- 1 cup oat flour
- 1/2 cup unsweetened cocoa powder
- 1 scoop neutral protein powder
- 1/4 cup coconut sugar or monk fruit sweetener
- 2–3 tablespoons pure maple syrup
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3 ripe bananas
- 1/2 cup milk of choice
- 1 egg
- 1 teaspoon vanilla extract
- 3/4 cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 175°C (350°F).
- Grease a mini muffin tin with non-stick spray.
- In a large bowl, mix the dry ingredients: oat flour, cocoa powder, protein powder, coconut sugar, baking powder, baking soda, and salt.
- In a blender, puree the ripe bananas and milk until smooth.
- In a separate bowl, beat the egg until frothy.
- Combine the banana mixture and vanilla extract with the egg and mix well.
- Combine the wet ingredients with the dry ingredients and stir until just combined.
- Gently fold in the chocolate chips.
- Divide the batter into the muffin tin, filling each cup about 2/3 full.
- Bake for 16-18 minutes or until a toothpick comes out clean.
- Cool the muffins in the tin for 10 minutes before transferring to a wire rack to cool completely.
Notes
For best results, use room temperature ingredients. Store in an airtight container for up to 3 days at room temperature or 1 week in the fridge.
