Delightful sandwich cookies featuring rich, fudgy chocolate cookies filled with smooth orange chocolate ganache, perfect for any occasion.
Ingredients

- 200 g dark chocolate (minimum 50% cocoa solids)
- 100 g butter, room temperature
- 2 medium eggs
- 100 g light brown sugar
- 100 g caster sugar
- 1 tsp pure vanilla extract or ½ tsp of vanilla paste
- 60 g plain flour (all-purpose)
- 2 tbsp unsweetened cocoa powder
- 1 tsp baking powder
- 1 pinch fine sea salt
- 80 g ground almonds
- 200 g orange chocolate, chopped
- 200 g double cream (heavy cream)
Instructions
- Preheat your oven to 170°C fan / 375°F / Gas 5. Line two baking trays with baking paper.
- In a small heatproof bowl, combine the chopped dark chocolate and butter. Melt over a double boiler and let cool slightly.
- In a large mixing bowl, whisk together the eggs, light brown sugar, caster sugar, and vanilla extract until thick and fluffy (about 3-4 minutes).
- Pour the cooled chocolate mixture into the egg mixture and mix until smooth.
- Sift in the flour, cocoa powder, baking powder, and sea salt, then fold in the ground almonds until just combined.
- Chill the dough in the fridge for about 5 minutes.
- Use a cookie scoop to place cookies on the prepared baking trays spacing them generously.
- Bake the cookies for 7-8 minutes (longer for larger cookies).
- After baking, allow cookies to cool on the trays for at least 12 minutes.
- For the ganache, bring the double cream to a boil, pour over chopped orange chocolate, stir until smooth, and let cool until thickened.
- Pipe the ganache filling onto one cookie and sandwich with another. Repeat with remaining cookies.
Notes
Store cookies in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
