- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 cup granulated sugar
- 1/2 cup butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup whole milk
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup heavy cream
- 8 oz dark chocolate, chopped
- 3 large eggs, separated
- 1/4 cup sugar
- 1 teaspoon vanilla extract
- Fresh berries for topping
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- Cream the butter and sugar together until light and fluffy, about 3-4 minutes. Add eggs one at a time, mixing well. Stir in vanilla extract.
- In another bowl, whisk together flour, cocoa powder, baking powder, and salt. Gradually add this mixture to the creamed mixture, alternating with milk. Mix until just combined.
- Pour the batter into the prepared pan and bake for 25-30 minutes. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack.
- Melt the dark chocolate in a heatproof bowl over simmering water until smooth, then cool slightly.
- Whip the cream in a chilled bowl until soft peaks form. In another bowl, beat egg whites until stiff peaks form. In a different bowl, whisk egg yolks and sugar until pale and creamy.
- Fold the melted chocolate into the yolk mixture, then fold in the egg whites and whipped cream until no white streaks remain.
- Spread the mousse over the cooled cake and refrigerate for at least 2 hours to set.
- Before serving, decorate with fresh berries.
Notes
For the best results, ensure all ingredients are at room temperature before mixing. You can prepare the mousse a day in advance.
