Ingredients

- 1/2 cup pitted Medjool Dates (about 8)
- 1 can full-fat coconut milk
- 1 tsp vanilla extract
- 1 tsp peppermint flavoring
- 1/4 cup mint chocolate protein
- 1 Tbsp cocoa powder
- Pinch of salt
- 1 1/4 cup dark chocolate chips
- 1 Tbsp coconut oil
Instructions
- Prepare the molds by placing them on a baking sheet.
- Blend the filling ingredients in a blender until smooth.
- Fill the molds with the mixture and tap gently to remove air bubbles.
- Freeze the molds for at least 6 hours or overnight.
- Melt the dark chocolate chips and coconut oil in a saucepan.
- Dip the frozen bars into the melted chocolate and let excess drip off.
- Set the bars on a parchment-lined baking sheet until the chocolate hardens.
Notes
For a thicker filling, let it sit for a few minutes after blending. Ensure the bars are completely frozen before dipping to prevent melting.
