Description

Delicious and healthy chocolate mint ice cream bars packed with protein, perfect for satisfying your sweet tooth guilt-free.


Ingredients

Scale
  • 1/2 cup pitted Medjool Dates (about 8)
  • 1 can full-fat coconut milk
  • 1 tsp vanilla extract
  • 1 tsp peppermint flavoring
  • 1/4 cup mint chocolate protein
  • 1 Tbsp cocoa powder
  • Pinch of salt
  • 1 1/4 cup dark chocolate chips
  • 1 Tbsp coconut oil

Instructions

  1. Prepare the molds by placing them on a baking sheet.
  2. Blend the filling ingredients in a blender until smooth.
  3. Fill the molds with the mixture and tap gently to remove air bubbles.
  4. Freeze the molds for at least 6 hours or overnight.
  5. Melt the dark chocolate chips and coconut oil in a saucepan.
  6. Dip the frozen bars into the melted chocolate and let excess drip off.
  7. Set the bars on a parchment-lined baking sheet until the chocolate hardens.

Notes

For a thicker filling, let it sit for a few minutes after blending. Ensure the bars are completely frozen before dipping to prevent melting.
