- 1 1/2 cups chocolate wafer crumbs
- 4 tbsp butter, melted
- 1 1/2 cups heavy cream
- 12 ounces dark chocolate, roughly chopped
- 4 tbsp butter, room temperature
- 1 tbsp flaky sea salt
- 1/2 tsp vanilla bean paste
- 1 pinch salt
- Granulated sugar or powdered sugar, to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, combine chocolate wafer crumbs with melted butter and press into a 9-inch tart pan.
- Bake crust for 10-12 minutes until set, then let cool.
- In a saucepan, heat heavy cream until bubbling at edges, then stir in chopped chocolate and let sit for 3-4 minutes.
- Whisk until smooth, then add room temperature butter, salt, and vanilla bean paste.
- Pour ganache into cooled crust and chill for at least 2 hours or overnight for best flavor.
Notes
Use good-quality chocolate for a creamier ganache. Store in the fridge for up to 5 days.
