Description

A luscious and creamy Chocolate Ganache Tart with a perfectly crisp crust, balanced flavors of bittersweet and semisweet chocolate, and a touch of flaky sea salt.


Ingredients

  • 1 1/2 cups chocolate wafer crumbs
  • 4 tbsp butter, melted
  • 1 1/2 cups heavy cream
  • 12 ounces dark chocolate, roughly chopped
  • 4 tbsp butter, room temperature
  • 1 tbsp flaky sea salt
  • 1/2 tsp vanilla bean paste
  • 1 pinch salt
  • Granulated sugar or powdered sugar, to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine chocolate wafer crumbs with melted butter and press into a 9-inch tart pan.
  3. Bake crust for 10-12 minutes until set, then let cool.
  4. In a saucepan, heat heavy cream until bubbling at edges, then stir in chopped chocolate and let sit for 3-4 minutes.
  5. Whisk until smooth, then add room temperature butter, salt, and vanilla bean paste.
  6. Pour ganache into cooled crust and chill for at least 2 hours or overnight for best flavor.

Notes

Use good-quality chocolate for a creamier ganache. Store in the fridge for up to 5 days.
