- 3/4 cup granulated sugar
- 1/4 cup light olive oil or avocado oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup all-purpose flour
- 2 tablespoons granulated sugar (for rolling)
- 1/3 cup powdered sugar (for crinkle effect)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In two shallow bowls, place granulated sugar in one and powdered sugar in the other.
- In a large bowl, combine cocoa powder, granulated sugar, and oil until well-combined.
- Add the eggs and vanilla extract, mixing until just combined.
- Gently fold in salt, baking powder, and flour until the dough is stiff.
- Roll the dough into 1 1/2 inch balls, refrigerating if too sticky.
- Coat each ball in granulated sugar and then powdered sugar.
- Place the balls on the baking sheet about 2 inches apart.
- Bake for about 10 minutes, or until the tops form cracks.
- Cool on the baking sheet for 5-10 minutes before transferring to a wire rack.
Notes
Allow cookies to cool completely for the best texture. Experiment with different cocoa types and add-ins for variety.
