Description

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 jar (10 ounces) maraschino cherries, juice reserved
  • 1/2 cup semisweet chocolate chips
  • 1/4 cup sweetened condensed milk

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Line 3 large baking sheets with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour and cocoa powder.
  3. Add the room-temperature butter, granulated sugar, kosher salt, baking powder, and baking soda to a stand mixer and mix for 2-3 minutes until light and fluffy.
  4. Crack in the egg and pour in the vanilla extract; mix well.
  5. Gradually add the flour mixture until just combined.
  6. Drop heaping tablespoons of dough onto the baking sheets, leaving 2 inches between each.
  7. Use your thumb to create a small indentation in each dough ball.
  8. Place one maraschino cherry in each indentation and press gently.
  9. Melt the semisweet chocolate chips, sweetened condensed milk, and 2 tablespoons of reserved cherry juice in a saucepan over medium-low heat.
  10. Fill each cherry indentation with the melted chocolate mixture.
  11. Bake for 9-11 minutes until just set, and cool for 5 minutes before transferring to a wire rack.

Notes

Store cookies in an airtight container; they last about 3 days at room temperature.
