- 5 cups old-fashioned rolled oats
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp sea salt
- 4 large eggs
- 2 cups milk
- 1 cup applesauce
- 1/4 cup honey or maple syrup
- 2 tsp vanilla extract
- 1 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare your muffin pan with non-stick cooking spray or liners.
- In a large bowl, combine oats, baking powder, cinnamon, nutmeg, and sea salt; whisk together.
- In another bowl, beat the eggs and then stir in milk, applesauce, honey (or maple syrup), and vanilla extract.
- Combine the wet mixture with the dry ingredients and mix gently.
- Let the mixture rest for 20 minutes.
- Fold in the chocolate chips.
- Scoop the batter into the muffin pan, filling each cup and pressing down slightly.
- Bake for 22-25 minutes until golden brown and a toothpick comes out clean.
- Let cool in the pan before transferring to a wire rack.
Notes
For added moisture, incorporate an extra tablespoon of applesauce if muffins turn out dry. You can also use certified gluten-free oats for a gluten-free option.
