Description

Hearty and wholesome muffins combining oats and chocolate chips, perfect for breakfast or snacks.


Ingredients

  • 5 cups old-fashioned rolled oats
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp sea salt
  • 4 large eggs
  • 2 cups milk
  • 1 cup applesauce
  • 1/4 cup honey or maple syrup
  • 2 tsp vanilla extract
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your muffin pan with non-stick cooking spray or liners.
  3. In a large bowl, combine oats, baking powder, cinnamon, nutmeg, and sea salt; whisk together.
  4. In another bowl, beat the eggs and then stir in milk, applesauce, honey (or maple syrup), and vanilla extract.
  5. Combine the wet mixture with the dry ingredients and mix gently.
  6. Let the mixture rest for 20 minutes.
  7. Fold in the chocolate chips.
  8. Scoop the batter into the muffin pan, filling each cup and pressing down slightly.
  9. Bake for 22-25 minutes until golden brown and a toothpick comes out clean.
  10. Let cool in the pan before transferring to a wire rack.

Notes

For added moisture, incorporate an extra tablespoon of applesauce if muffins turn out dry. You can also use certified gluten-free oats for a gluten-free option.
