Description

Delicious hybrid dessert combining classic chocolate chip cookies and creamy cheesecake in easy-to-make bars.


Ingredients

  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 cup semi-sweet chocolate chips
  • 8 oz cream cheese, softened
  • 1/3 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. Combine dry ingredients: In a medium bowl, whisk together the flour, baking soda, and salt.
  3. Cream the butter and sugars together until smooth and creamy.
  4. Incorporate the egg and vanilla extract into the mixture.
  5. Gradually add the flour mixture, mixing until just combined.
  6. Layer half of your cookie dough into the bottom of the prepared pan.
  7. Make the cheesecake filling by beating the cream cheese, 1/3 cup sugar, the egg, and 1 teaspoon vanilla extract until smooth.
  8. Pour the cheesecake filling over the cookie base.
  9. Crumble the remaining cookie dough over the cheesecake layer.
  10. Bake for 25-30 minutes until the top is golden brown.
  11. Cool in the pan for at least 30 minutes before slicing.

For best results, ensure butter and cream cheese are at room temperature before mixing.
