- 1/2 cup (110g) unsalted butter, softened
- 1/2 cup (100g) granulated sugar
- 1/4 cup (55g) light brown sugar, packed
- 1 large egg, room temperature
- 1 tsp vanilla extract
- 1/2 tsp kosher salt
- 1/2 tsp baking powder
- 2 cups (264g) all-purpose flour
- 1 cup (170g) mini semi-sweet chocolate chips, plus more for topping
- Flaky sea salt, for topping (optional)
- 1/2 cup (120g) Biscoff creamy cookie butter
- 1/4 cup (55g) unsalted butter, melted
- 1 tsp vanilla extract
- 1/2 tsp kosher salt
- 1 cup (100g) powdered sugar
- 2 tbsp cornstarch
- 2 tsp milk (adjust as needed)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking pan.
- In a large mixing bowl, beat the softened butter, granulated sugar, and light brown sugar until light and fluffy, about 3-4 minutes.
- Mix in the egg and vanilla extract until well combined.
- In another bowl, whisk together the flour, baking powder, and kosher salt. Gradually add to the wet ingredients, mixing just until combined.
- Fold in mini chocolate chips, reserving some for topping.
- Spread the dough evenly into the prepared baking pan.
- Bake for 20-25 minutes, or until lightly golden and a toothpick inserted comes out with a few moist crumbs.
- Allow cooling completely in the pan on a wire rack.
- For frosting, whisk together cookie butter, melted butter, vanilla extract, and kosher salt until smooth.
- Add powdered sugar and cornstarch, whisking until combined. Adjust with milk as needed.
- Once bars are cooled, spread frosting on top, and sprinkle with chocolate chips and flaky sea salt.
- Cut into squares and serve. Store leftovers in an airtight container.
Notes
Underbaking slightly increases chewiness. Use quality ingredients for the best flavor.
