Description

Decadent dessert bars combining buttery chocolate chip cookie dough with a silky cookie butter swirl.


Ingredients

  • 1/2 cup (110g) unsalted butter, softened
  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (55g) light brown sugar, packed
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • 1/2 tsp kosher salt
  • 1/2 tsp baking powder
  • 2 cups (264g) all-purpose flour
  • 1 cup (170g) mini semi-sweet chocolate chips, plus more for topping
  • Flaky sea salt, for topping (optional)
  • 1/2 cup (120g) Biscoff creamy cookie butter
  • 1/4 cup (55g) unsalted butter, melted
  • 1 tsp vanilla extract
  • 1/2 tsp kosher salt
  • 1 cup (100g) powdered sugar
  • 2 tbsp cornstarch
  • 2 tsp milk (adjust as needed)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking pan.
  2. In a large mixing bowl, beat the softened butter, granulated sugar, and light brown sugar until light and fluffy, about 3-4 minutes.
  3. Mix in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together the flour, baking powder, and kosher salt. Gradually add to the wet ingredients, mixing just until combined.
  5. Fold in mini chocolate chips, reserving some for topping.
  6. Spread the dough evenly into the prepared baking pan.
  7. Bake for 20-25 minutes, or until lightly golden and a toothpick inserted comes out with a few moist crumbs.
  8. Allow cooling completely in the pan on a wire rack.
  9. For frosting, whisk together cookie butter, melted butter, vanilla extract, and kosher salt until smooth.
  10. Add powdered sugar and cornstarch, whisking until combined. Adjust with milk as needed.
  11. Once bars are cooled, spread frosting on top, and sprinkle with chocolate chips and flaky sea salt.
  12. Cut into squares and serve. Store leftovers in an airtight container.

Notes

Underbaking slightly increases chewiness. Use quality ingredients for the best flavor.
