Ingredients

  • 1.5 lbs boneless skinless chicken breast
  • 3/4 cup nonfat plain Greek yogurt
  • 1/4 cup light mayonnaise
  • 1 tsp apple cider vinegar
  • 1 canned chipotle pepper in adobo
  • 3 tbsp ranch seasoning

Instructions

  1. Prep the chicken: Cut the chicken breast in half horizontally to create thinner filets.
  2. Make the Chipotle Ranch Marinade: In a blender, combine Greek yogurt, chipotle pepper, apple cider vinegar, and ranch seasoning, then blend until smooth.
  3. Marinate the chicken: Pour half of the marinade over the chicken fillets and marinate for at least 1 hour.
