- 1 lb boneless skinless chicken breast
- 3/4 cup nonfat plain Greek yogurt
- 1/4 cup light mayonnaise
- 1 tsp apple cider vinegar
- 1 canned chipotle pepper in adobo and adobo sauce
- 3 tbsp ranch seasoning
- 2 cups cooked quinoa or rice or cauliflower rice
- 2 cups shredded red cabbage
- 1.5 cups canned black beans, rinsed and drained
- 1 cup corn
- 1 cup cherry tomatoes, chopped
- 1/4 cup green onions, chopped
- 1/4 cup cilantro, chopped
- 1 avocado, chopped
Instructions
- Prepare the Chipotle Ranch Sauce: Start by adding the yogurt, chipotle peppers, apple cider vinegar, and ranch seasoning to a blender. Blend until smooth and creamy, about 30-45 seconds. Taste and adjust the heat level if needed.
- Marinate the Chicken: In a bowl or zip-top bag, marinate the chicken breasts in half of the chipotle ranch sauce, ensuring they’re well-coated. Allow to marinate for at least 30 minutes.
- Cook the Chicken: Preheat your grill pan or an outdoor grill over medium-high heat. Cook the chicken for 4-6 minutes per side until golden brown and cooked through (165°F internal temperature).
- Assemble the Bowls: Cook your grains. In a large bowl, layer the cooked quinoa or rice as the base, followed by shredded cabbage, black beans, corn, chopped tomatoes, green onions, cilantro, and diced avocado. Slice the grilled chicken and place it on top. Drizzle the remaining sauce.
- Serve and Enjoy: Optional: Serve with lime wedges for a zesty finish or extra chipotle ranch sauce on the side.
Notes
