Description

Ingredients

  • 2 teaspoons olive oil
  • 500 g (1 lb) extra lean ground beef
  • 1 brown onion, diced
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • Half head green cabbage, roughly chopped (about 750 g)
  • 1 can diced tomatoes
  • Half cup uncooked long grain white rice
  • 1 cup water
  • 3 tablespoons chipotle in adobo sauce
  • 1 teaspoon salt

Instructions

  1. Heat the olive oil in a large pot over medium-high heat.
  2. Brown the ground beef and cook for about 3 to 4 minutes.
  3. Sauté the diced onion, cumin, and garlic powder until the onions are translucent.
  4. Add the chopped cabbage, diced tomatoes, rice, water, chipotle, and salt.
  5. Bring to a gentle simmer and cover with a lid.
  6. Cook on low heat for 35 to 40 minutes or until the cabbage is tender and rice is fluffy.
  7. Taste and adjust seasoning before serving.
