- 2 teaspoons olive oil
- 500 g (1 lb) extra lean ground beef
- 1 brown onion, diced
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder
- Half head green cabbage, roughly chopped (about 750 g)
- 1 can diced tomatoes
- Half cup uncooked long grain white rice
- 1 cup water
- 3 tablespoons chipotle in adobo sauce
- 1 teaspoon salt
Instructions
- Heat the olive oil in a large pot over medium-high heat.
- Brown the ground beef and cook for about 3 to 4 minutes.
- Sauté the diced onion, cumin, and garlic powder until the onions are translucent.
- Add the chopped cabbage, diced tomatoes, rice, water, chipotle, and salt.
- Bring to a gentle simmer and cover with a lid.
- Cook on low heat for 35 to 40 minutes or until the cabbage is tender and rice is fluffy.
- Taste and adjust seasoning before serving.
