- 75 g Chinese sausage, sliced into quarter-inch thick pieces
- 1 Tbsp vegetable oil
- 1/3 cup diced onion
- 1/3 cup diced carrot
- 3–4 cloves garlic, finely chopped
- 1/2 tsp white pepper
- 2 eggs, beaten
- 1 cup chopped gai lan
- 300 g (2 cups) cooked jasmine rice
- 1 Tbsp soy sauce
- 2 tsp fish sauce
- 1 tsp sugar
Instructions
- Toast the sausage: Heat a wok over medium-high heat and add the sliced Chinese sausage in a single layer. Cook until browned on one side, about 2-3 minutes, then remove from the wok and leave the fat behind.
- Sauté the vegetables: Add a tablespoon of vegetable oil to the wok and toss in the diced onion and carrot. Sauté for approximately 2 minutes until the onion becomes translucent. Next, add the chopped garlic and cook for another 30 seconds until fragrant; then, stir in the gai lan and cook for another 1 minute until slightly wilted.
- Scramble the eggs: Push the sautéed veggies to the side of the wok, making a space to scramble the beaten eggs. Pour them in and stir briefly to scramble until just set, about 1 minute.
- Add rice and sauces: Gently fold the cooked rice into the mixture, followed by soy sauce, fish sauce, sugar, and white pepper. Toss everything together well to ensure the rice is evenly coated.
- Incorporate the sausage: Add the browned sausage back into the mixture, stirring gently to combine, and making sure the rice grains are separated.
- Toast the rice: Let the rice sit without stirring for 10-15 seconds; this helps develop a slight crispness. Mix and repeat the process until the rice is nicely toasted.
- Garnish and serve: Remove from heat. Transfer to serving plates, top with chopped cilantro or green onions, and serve with cucumber slices and lime wedges for extra zest.
Notes
Use day-old rice for the best texture and avoid overcrowding the wok for optimal cooking.
