Description

A flavorful and easy recipe for grilled chicken thighs marinated in vibrant chimichurri sauce, perfect for any occasion.


Ingredients

  • 4 Chicken Thighs (bone-in, skin-on)
  • 2 cups Fresh Parsley, chopped
  • 1/2 cup Olive Oil
  • 1/4 cup Red Wine Vinegar
  • 4 Cloves Garlic, minced
  • 1 teaspoon Red Pepper Flakes
  • Salt and Pepper to taste

Instructions

  1. In a mixing bowl, combine the chopped parsley, olive oil, red wine vinegar, minced garlic, red pepper flakes, salt, and pepper to create the chimichurri sauce.
  2. Reserve half of the chimichurri sauce for serving.
  3. Pour the remaining chimichurri over the chicken thighs in a resealable bag or bowl and marinate for at least 1 hour or overnight.
  4. Preheat the grill to medium-high heat (375-400°F).
  5. Grill the chicken thighs skin-side down for 6-7 minutes, then flip and grill for another 6-7 minutes until cooked through (internal temperature of 165°F).
  6. Serve the grilled chicken topped with the reserved chimichurri sauce.

Notes

For best results, marinate the chicken overnight. Adjust red pepper flakes to suit spice preference.
