- 4 Chicken Thighs (bone-in, skin-on)
- 2 cups Fresh Parsley, chopped
- 1/2 cup Olive Oil
- 1/4 cup Red Wine Vinegar
- 4 Cloves Garlic, minced
- 1 teaspoon Red Pepper Flakes
- Salt and Pepper to taste
Instructions
- In a mixing bowl, combine the chopped parsley, olive oil, red wine vinegar, minced garlic, red pepper flakes, salt, and pepper to create the chimichurri sauce.
- Reserve half of the chimichurri sauce for serving.
- Pour the remaining chimichurri over the chicken thighs in a resealable bag or bowl and marinate for at least 1 hour or overnight.
- Preheat the grill to medium-high heat (375-400°F).
- Grill the chicken thighs skin-side down for 6-7 minutes, then flip and grill for another 6-7 minutes until cooked through (internal temperature of 165°F).
- Serve the grilled chicken topped with the reserved chimichurri sauce.
Notes
For best results, marinate the chicken overnight. Adjust red pepper flakes to suit spice preference.
