- 4 boneless skinless chicken breasts
- 1/2 cup good-quality olive oil (extra virgin recommended)
- 1/3 cup red wine vinegar
- 1 cup fresh parsley, finely chopped
- 1/2 cup fresh cilantro, chopped

- 4 cloves garlic, minced
- 1/2 tsp red pepper flakes (adjust for heat preference)
- Salt to taste

- 2 cups cooked rice (white, brown, or cauliflower rice for low carb)
- 1 cup cherry tomatoes, halved
- 1 avocado, sliced
- 1/2 cup sliced red onion
- 1 lime, cut into wedges
- 1/2 cup mayonnaise (or Greek yogurt for a healthier option)
- 1/4 cup sour cream or Greek yogurt
- 3 cloves garlic, minced (for the sauce)
- 1 tbsp lemon juice
- 1 tsp olive oil
- Salt and pepper to taste (for the sauce)
Instructions
- Make the chimichurri: In a bowl, combine parsley, cilantro, oregano, 4 minced garlic cloves, red pepper flakes, red wine vinegar, 1/2 cup olive oil, salt, and black pepper. Mix well. Chef’s Tip: Let it sit for 15 minutes before using.
- Marinate the chicken: Reserve half of the chimichurri for serving and pour the rest over the chicken breasts. Marinate for 20–30 minutes for the best flavor.
- Cook the chicken: Preheat your grill or skillet over medium-high heat. Add the chicken and cook for 6–7 minutes per side until the internal temperature reaches 165°F. Remove and let them rest for 5 minutes before slicing.
- Prepare the garlic sauce: In a bowl, whisk together mayo, sour cream (or Greek yogurt), 3 minced garlic cloves, lemon juice, 1 tsp olive oil, salt, and pepper until smooth.
- Assemble the bowls: Divide the cooked rice among bowls. Top with sliced chicken, reserved chimichurri, cherry tomatoes, avocado, and red onion. Drizzle garlic sauce over the top and serve with lime wedges.
Notes
Store leftovers in airtight containers in the refrigerator for up to 3 days. Chicken can be marinated the day before for more flavor.
