Ingredients

  • 400g can chickpeas, rinsed and drained
  • 1 cup rolled oats
  • 1/4 cup natural nut butter (almond, peanut, or tahini)
  • 1 teaspoon dried basil
  • 1 teaspoon onion powder
  • 1 teaspoon salt

Instructions

  1. Preheat the oven to 160 degrees Celsius (320 degrees Fahrenheit) and line a baking tray with baking paper.
  2. Blend the rinsed and drained chickpeas, rolled oats, nut butter, and chosen seasonings in a food processor for about 2 minutes until finely mashed.
  3. Adjust the consistency by adding a splash of water if the mixture is too crumbly and pulse until combined.
  4. Divide the dough into 4 to 5 portions, roll each portion out thinly, and cut into cracker shapes.
  5. Transfer the cracker shapes to the prepared baking tray.
  6. Bake for 25 minutes until lightly golden and crisp.
  7. Cool completely on the baking tray to maximize crunch.
  8. Store in an airtight container for 1-2 weeks or freeze for up to 2 months.
