  • 1 pound cooked shredded chicken
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (14 oz) diced tomatoes with green chilies
  • 4 cups chicken broth
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Tortilla chips for serving
  • Fresh cilantro for garnish
  • Sour cream (optional)

Instructions

  1. In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and minced garlic, sauté for about 3-4 minutes until softened.
  2. Add the diced red bell pepper and cook for another 2-3 minutes.
  3. Stir in the shredded chicken, black beans, corn, diced tomatoes (with juices), chicken broth, cumin, chili powder, salt, and pepper. Mix well.
  4. Bring to a gentle boil then reduce heat and let it simmer for about 20 minutes.
  5. Serve hot, topped with tortilla chips, fresh cilantro, and sour cream if desired.
