Description

A comforting lasagna that blends shredded chicken, spinach, artichokes, and three types of cheese into a delicious dish perfect for family gatherings.


Ingredients

  • 16 ounces lasagna noodles (whole wheat recommended)
  • 3 tablespoons unsalted butter
  • 1.5 teaspoons garlic, minced
  • 3 tablespoons all-purpose flour
  • 3 cups whole milk
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 cup parmesan cheese, grated
  • 3 cups rotisserie chicken, shredded
  • 1/2 pound frozen chopped spinach, thawed and drained
  • 1 can artichoke hearts, drained and chopped
  • 1 container whole milk ricotta cheese
  • 4 cups mozzarella cheese, shredded
  • Fresh parsley for garnish
  • Grated parmesan for garnish

Instructions

  1. Preheat the oven to 375°F (190°C) and spray a 9×13 inch baking dish with nonstick cooking spray.
  2. Melt the butter in a large skillet over medium heat.
  3. Add minced garlic and cook for about 1 minute until fragrant.
  4. Add flour and whisk to combine, cooking for another minute. Gradually whisk in milk and bring to a simmer. Thicken with salt and pepper for 2-4 minutes.
  5. Stir in grated parmesan until melted and creamy.
  6. Add shredded rotisserie chicken, spinach, and chopped artichokes. Mix well and remove from heat.
  7. Layer a thin layer of chicken mixture in the baking dish, followed by lasagna noodles, ricotta cheese, and shredded mozzarella. Repeat until ingredients are used up, finishing with mozzarella on top.
  8. Cover with foil and bake for 25-30 minutes. Remove foil and bake for another 5-10 minutes until cheese is golden.
  9. Let it rest for about 10 minutes, then garnish with parsley and parmesan before serving.
