- 16 ounces lasagna noodles (whole wheat recommended)
- 3 tablespoons unsalted butter
- 1.5 teaspoons garlic, minced
- 3 tablespoons all-purpose flour
- 3 cups whole milk
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 cup parmesan cheese, grated
- 3 cups rotisserie chicken, shredded
- 1/2 pound frozen chopped spinach, thawed and drained
- 1 can artichoke hearts, drained and chopped
- 1 container whole milk ricotta cheese
- 4 cups mozzarella cheese, shredded
- Fresh parsley for garnish
- Grated parmesan for garnish
Instructions
- Preheat the oven to 375°F (190°C) and spray a 9×13 inch baking dish with nonstick cooking spray.
- Melt the butter in a large skillet over medium heat.
- Add minced garlic and cook for about 1 minute until fragrant.
- Add flour and whisk to combine, cooking for another minute. Gradually whisk in milk and bring to a simmer. Thicken with salt and pepper for 2-4 minutes.
- Stir in grated parmesan until melted and creamy.
- Add shredded rotisserie chicken, spinach, and chopped artichokes. Mix well and remove from heat.
- Layer a thin layer of chicken mixture in the baking dish, followed by lasagna noodles, ricotta cheese, and shredded mozzarella. Repeat until ingredients are used up, finishing with mozzarella on top.
- Cover with foil and bake for 25-30 minutes. Remove foil and bake for another 5-10 minutes until cheese is golden.
- Let it rest for about 10 minutes, then garnish with parsley and parmesan before serving.
