Description

A cozy, comforting meal featuring tender chicken in a rich garlic-parmesan sauce served over fluffy rice.


Ingredients

  • 2 Chicken Breasts
  • 4 tablespoons Unsalted Butter
  • 4 cloves Garlic, minced
  • 1 Lemon, juiced
  • 1 cup Low-Sodium Chicken Broth
  • 1 cup Heavy Cream
  • 1 cup Freshly Grated Parmesan Cheese
  • 2 cups Long-Grain or Jasmine Rice
  • Salt and Pepper, to taste
  • Fresh Parsley, for garnish

Instructions

  1. Pat the chicken breasts dry with a paper towel and season both sides with salt and pepper.
  2. In a skillet over medium heat, melt 2 tablespoons of butter and cook the chicken until golden brown and cooked through, about 6-7 minutes per side. Remove and set aside.
  3. In the same skillet, add remaining butter and minced garlic, sauté for 1-2 minutes until fragrant.
  4. Deglaze with lemon juice and chicken broth, simmer for about 5 minutes.
  5. Stir in heavy cream and parmesan cheese, cooking for an additional 2-3 minutes to thicken the sauce.
  6. Meanwhile, cook the rice according to package instructions.
  7. Once the rice is done, combine it with the sauce in the skillet, stirring gently until well-coated.
  8. Slice the chicken and arrange it over the rice. Garnish with fresh parsley and Parmesan cheese.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. For a thicker sauce, reserve some pasta water to stir in if needed.
