Description

A delightful twist on the classic Italian dish featuring tender chicken in a garlicky butter sauce served over creamy garlic parmesan rice.


Ingredients

  • 2 boneless, skinless Chicken Breasts
  • 4 cloves Garlic, minced
  • 1/2 cup unsalted Butter
  • 2 tablespoons Extra Virgin Olive Oil
  • 1 cup Long-Grain or Basmati Rice
  • 2 cups Chicken Broth
  • 1/2 cup grated Parmesan Cheese
  • 1/4 cup chopped Parsley
  • Salt and Pepper, to taste

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. In a large skillet, heat olive oil and butter over medium-high heat, sear the chicken for 6-7 minutes on each side, until cooked through.
  3. Remove the chicken and set aside, then add butter and minced garlic to the skillet, cooking for 1-2 minutes until fragrant.
  4. Add rice to the skillet, stir to coat with garlic, pour in chicken broth, and bring to a boil. Reduce to simmer and cover, cooking according to package directions (about 15-18 minutes).
  5. Once rice is cooked, turn off heat, fold in parmesan cheese, and return chicken to the skillet.
  6. Garnish with chopped parsley and serve warm.

Notes

For maximum flavor, let chicken rest at room temperature before cooking. Store leftovers for up to 3 days in an airtight container.
