- 2 boneless, skinless Chicken Breasts
- 4 cloves Garlic, minced
- 1/2 cup unsalted Butter
- 2 tablespoons Extra Virgin Olive Oil
- 1 cup Long-Grain or Basmati Rice
- 2 cups Chicken Broth
- 1/2 cup grated Parmesan Cheese
- 1/4 cup chopped Parsley
- Salt and Pepper, to taste
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- In a large skillet, heat olive oil and butter over medium-high heat, sear the chicken for 6-7 minutes on each side, until cooked through.
- Remove the chicken and set aside, then add butter and minced garlic to the skillet, cooking for 1-2 minutes until fragrant.
- Add rice to the skillet, stir to coat with garlic, pour in chicken broth, and bring to a boil. Reduce to simmer and cover, cooking according to package directions (about 15-18 minutes).
- Once rice is cooked, turn off heat, fold in parmesan cheese, and return chicken to the skillet.
- Garnish with chopped parsley and serve warm.
Notes
For maximum flavor, let chicken rest at room temperature before cooking. Store leftovers for up to 3 days in an airtight container.
