Ingredients

  • Chicken Sausage
  • Whole Grain Pasta
  • Bell Peppers
  • Zucchini
  • Olive Oil
  • Garlic
  • Salt and Pepper
  • Parmesan Cheese (optional)

Instructions

  1. Cook the whole grain pasta according to package instructions in a large pot of salted boiling water. Drain and set aside, keeping about ½ cup of the pasta water.
  2. In a large skillet, heat about 2 tablespoons of olive oil over medium heat.
  3. Add minced garlic and sliced chicken sausage to the skillet. Cook for 5-7 minutes or until browned.
  4. Toss in diced bell peppers and zucchini, sautéing for 4-5 minutes until softened.
  5. Fold the drained pasta into the skillet, mixing everything. Season with salt, pepper, and add reserved pasta water if needed.
  6. Divide into meal prep containers and top with Parmesan cheese if desired.
  7. Let cool before sealing containers for storage.
