Description

A quick and easy one-pot meal featuring tender chicken sausage and vibrant broccoli on a bed of perfectly cooked orzo.


Ingredients

Scale
  • 12 oz chicken sausage, sliced
  • 1 cup orzo pasta
  • 2 cups broccoli florets
  • 2 ½ cups chicken broth
  • 1 small onion, chopped
  • 3 garlic cloves, minced
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • ¼ cup Parmesan, optional
  • Salt and pepper to taste

Instructions

  1. Heat 2 tbsp of olive oil in a large skillet over medium heat. Add the sliced chicken sausage and brown for about 3-4 minutes until golden. Remove and set aside.
  2. In the same skillet, add the chopped onion and minced garlic until soft and fragrant, about 2-3 minutes.
  3. Add the orzo to the skillet, stirring frequently for 1-2 minutes until lightly toasted.
  4. Pour in 2 ½ cups of chicken broth and bring to a gentle simmer. Cook for about 8-10 minutes, stirring occasionally until the orzo absorbs most of the liquid and is al dente.
  5. During the last 3 minutes of cooking, stir in the broccoli florets.
  6. Return the browned chicken sausage to the skillet, then stir in the lemon juice and Parmesan, if using. Mix well and serve hot!

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat with a splash of broth to regain moisture.
