Ingredients

  • 1 pound boneless, skinless chicken thighs (or breasts)
  • 2 tablespoons soy sauce (preferably low-sodium)
  • 1 tablespoon vegetable oil (or peanut oil)
  • 1 tablespoon oyster sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Skewers (wooden or metal; soak wooden skewers in water for 30 minutes)
  • ½ cup creamy peanut butter (natural peanut butter preferred)
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon brown sugar (or coconut sugar)
  • 1 tablespoon fresh lime juice
  • 1 teaspoon red chili flakes (optional)
  • Warm water (to thin the sauce as needed)

Instructions

  1. In a large bowl, mix soy sauce, vegetable oil, oyster sauce, brown sugar, garlic powder, ground coriander, ground cumin, salt, and black pepper to create the marinade. Slice the chicken into strips and add to the marinade. Toss to coat, cover, and refrigerate for at least 30 minutes (up to 4 hours).
  2. In a separate bowl, whisk together peanut butter, soy sauce, rice vinegar, brown sugar, lime juice, and optional red chili flakes. Add warm water gradually until the sauce reaches a pourable consistency. Set aside.
  3. Preheat your grill or grill pan to medium-high heat.
  4. Thread the marinated chicken strips onto the skewers, spacing them apart for even cooking.
  5. Place the skewers on the grill and cook for 12–15 minutes, turning occasionally until the chicken reaches 165°F. Serve hot with the peanut sauce.

Notes

For juicier chicken, avoid overcrowding the grill to allow for proper air circulation. You can marinate chicken a day in advance, but do not exceed 8 hours to prevent it from being too salty.
