- 8 oz rotini pasta
- 2 cups cooked chicken, shredded or diced
- 2 cups Velveeta cheese, cubed
- 1 cup mozzarella cheese, shredded
- 1 cup milk
- 1/2 cup chicken broth
- 1 tsp garlic powder
- Salt and pepper to taste
- 2 tbsp butter, at room temperature
Instructions
- Cook the rotini in a large pot of salted water according to package instructions, about 8-10 minutes, until al dente.
- In a large saucepan over medium heat, melt the butter (1-2 minutes), then stir in Velveeta and half of the mozzarella, followed by milk and chicken broth.
- After the sauce is creamy (about 5 minutes), add in cooked chicken and rotini, mixing thoroughly.
- Add garlic powder, salt, and pepper to taste, stirring for an additional 2-3 minutes.
- Before serving, sprinkle remaining mozzarella on top and let it melt for 1-2 minutes over low heat.
Notes
Store leftovers in the fridge for up to 3-4 days. Can be frozen for up to 2 months. Reheat with a splash of milk to restore creaminess.
