Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 2 cups cooked rice (white, brown, or jasmine)
  • 1 cup fresh parsley, finely chopped
  • 1/2 cup mayonnaise
  • 1 tablespoon lemon juice
  • 3 cloves garlic, minced
  • 1/2 teaspoon crushed red pepper flakes
  • Salt to taste

Instructions

  1. Season the chicken with olive oil, smoked paprika, and salt and pepper. Let it sit for 10-15 minutes.
  2. Grill the chicken for 6–7 minutes per side until fully cooked. Let it rest before slicing.
  3. In a bowl, whisk together mayonnaise, lemon juice, minced garlic, red pepper flakes, and salt until smooth.
  4. In serving bowls, add cooked rice, top with sliced grilled chicken, and drizzle with creamy garlic sauce. Garnish with fresh parsley.

Notes

For a lighter sauce, substitute Greek yogurt for mayonnaise. Can be customizable with additional toppings like avocado or sesame seeds.
