- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- Salt and black pepper to taste
- 2 cups cooked rice (white, brown, or jasmine)
- 1 cup fresh parsley, finely chopped
- 1/2 cup mayonnaise
- 1 tablespoon lemon juice
- 3 cloves garlic, minced
- 1/2 teaspoon crushed red pepper flakes
- Salt to taste
Instructions
- Season the chicken with olive oil, smoked paprika, and salt and pepper. Let it sit for 10-15 minutes.
- Grill the chicken for 6–7 minutes per side until fully cooked. Let it rest before slicing.
- In a bowl, whisk together mayonnaise, lemon juice, minced garlic, red pepper flakes, and salt until smooth.
- In serving bowls, add cooked rice, top with sliced grilled chicken, and drizzle with creamy garlic sauce. Garnish with fresh parsley.
Notes
For a lighter sauce, substitute Greek yogurt for mayonnaise. Can be customizable with additional toppings like avocado or sesame seeds.
