- 1 lb ground chicken
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped parsley
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 jar marinara sauce
- 1 cup shredded mozzarella cheese
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, parsley, egg, garlic, salt, and pepper. Mix gently until just combined.
- With wet hands, form the mixture into 1½-inch meatballs and place them on a parchment-lined baking sheet.
- Bake for 20 minutes or until the meatballs are cooked through and golden brown.
- In a large skillet, heat the marinara sauce over medium heat. Gently add the meatballs and let them simmer for about 5 minutes.
- Sprinkle shredded mozzarella on top of the meatballs, cover, and cook until the cheese is melted (about 2-3 minutes).
- Serve hot, ideally with pasta or in a sub sandwich.
Notes
For added flavor, consider toasting the breadcrumbs first. You can also add Italian seasoning for extra zest.
