Juicy, flavorful chicken meatballs draped in marinara and topped with gooey mozzarella, combining comfort food with a healthier twist.


Ingredients

  • 1 lb ground chicken
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped parsley
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 jar marinara sauce
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, parsley, egg, garlic, salt, and pepper. Mix gently until just combined.
  3. With wet hands, form the mixture into 1½-inch meatballs and place them on a parchment-lined baking sheet.
  4. Bake for 20 minutes or until the meatballs are cooked through and golden brown.
  5. In a large skillet, heat the marinara sauce over medium heat. Gently add the meatballs and let them simmer for about 5 minutes.
  6. Sprinkle shredded mozzarella on top of the meatballs, cover, and cook until the cheese is melted (about 2-3 minutes).
  7. Serve hot, ideally with pasta or in a sub sandwich.

Notes

For added flavor, consider toasting the breadcrumbs first. You can also add Italian seasoning for extra zest.
