Description

A lighter twist on the classic chicken parmesan featuring breaded chicken atop creamy cottage cheese, smothered in marinara and topped with melty cheese.


Ingredients

Scale
  • 1 cup breaded chicken breast, cooked and sliced
  • 1/2 cup cottage cheese
  • 1/2 cup marinara sauce
  • 1/4 cup shredded mozzarella cheese
  • 2 tablespoons grated Parmesan cheese
  • Fresh basil leaves for garnish

Instructions

  1. Layer 1/2 cup of cottage cheese in a serving bowl.
  2. Add 1 cup of sliced, cooked breaded chicken breast on top of the cottage cheese.
  3. Spoon 1/2 cup of marinara sauce evenly over the chicken.
  4. Sprinkle with 1/4 cup of shredded mozzarella and 2 tablespoons of grated Parmesan cheese.
  5. Garnish with fresh chopped basil leaves.
  6. Serve immediately or broil for 2 minutes for a melty cheese crust.

Notes

Let cottage cheese come to room temperature before assembling. Store leftovers in an airtight container for up to 3 days.
