Description

These chicken meatballs are tender, juicy, and packed with fresh herbs, making them perfect for various occasions.


Ingredients

  • 1 lb ground chicken
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1 onion, minced
  • 3 cloves of garlic, minced
  • 1/4 cup chopped fresh parsley
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine ground chicken, breadcrumbs, eggs, minced onion, minced garlic, parsley, salt, and black pepper. Mix until well combined.
  3. Scoop out a small amount of the mixture, roll it into a 1-inch meatball, and place it on the prepared baking sheet. Repeat.
  4. Bake the meatballs for 18-22 minutes until cooked through and lightly browned, reaching an internal temperature of 165°F (74°C).
  5. Let them cool for a few minutes before serving.

Notes

For gluten-free options, substitute breadcrumbs with gluten-free oats or almond flour. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
