- 1 lb ground chicken
- 1 cup breadcrumbs
- 2 large eggs
- 1 onion, minced
- 3 cloves of garlic, minced
- 1/4 cup chopped fresh parsley
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine ground chicken, breadcrumbs, eggs, minced onion, minced garlic, parsley, salt, and black pepper. Mix until well combined.
- Scoop out a small amount of the mixture, roll it into a 1-inch meatball, and place it on the prepared baking sheet. Repeat.
- Bake the meatballs for 18-22 minutes until cooked through and lightly browned, reaching an internal temperature of 165°F (74°C).
- Let them cool for a few minutes before serving.
Notes
For gluten-free options, substitute breadcrumbs with gluten-free oats or almond flour. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
