A healthier, homemade take on classic Chicken Lettuce Wraps, packed with vibrant flavors and fresh ingredients.

- 2 Tbsp oyster sauce
- 1 Tbsp hoisin paste or 1 1/2 Tbsp hoisin sauce
- 1 1/2 Tbsp soy sauce
- 1 Tbsp tamarind juice
- 1/2 tsp sesame oil
- 1/4 tsp white pepper
- Chili flakes, to taste
- 1 tsp cornstarch
- 1 Tbsp neutral oil
- 1/2 onion, chopped
- 3 cloves garlic, minced
- 1 Tbsp finely grated ginger
- 1/2 tsp five-spice powder
- 500g ground chicken
- 1/2 cup carrot, small dice
- 1/3 cup water chestnuts, small dice
- 1 tsp black soy sauce (optional)
- 1 green onion, chopped
- Half a head iceberg lettuce, split into leaves
- 1 Tbsp toasted white sesame seeds (optional)
Instructions
- Prepare the Sauce: In a bowl, combine all the sauce ingredients and stir well to combine.
- Dissolve Cornstarch: In a small bowl, dissolve cornstarch in just enough water to make a slurry. Set aside.
- Start Sautéing Ingredients: In a large wok, heat the neutral oil over medium-high heat. Add onion, garlic, and ginger. Stir-fry for about 2-3 minutes.
- Toast the Spices: Add five-spice powder and toast for 30 seconds.
- Cook the Chicken: Add ground chicken and cook through, around 5-7 minutes.
- Mix in the Sauce: Pour the sauce mixture over chicken, stirring until fully cooked, about 3-4 minutes.
- Add the Veggies: Add diced carrots and water chestnuts, stirring for another 3-5 minutes.
- High Heat for Finish: Increase heat to high and cook until thick and glossy.
- Optional Soy Sauce & Thicken: Stir in black soy sauce and cornstarch slurry to thicken.
- Final Touches: Toss in green onions and adjust seasoning.
- Serve: Spread hoisin sauce on lettuce leaves, add chicken filling, sprinkle with sesame seeds, and enjoy!
