Description

Delightful Chicken Kofta Bowls filled with spiced ground chicken, fluffy brown rice, fresh veggies, and creamy hummus.


Ingredients

  • 2 tsp olive oil
  • 1.33 lbs. 99% lean ground chicken
  • 1/4 cup parsley, minced
  • 2 garlic cloves, minced
  • 2 tsp cumin
  • 1/2 tsp coriander
  • 1/2 tsp dried mint
  • 1/4 tsp red pepper flakes
  • 1/4 tsp cinnamon
  • 1/4 tsp allspice
  • Salt and pepper to taste
  • 2 cups cooked brown rice
  • 1 cup cucumbers, chopped
  • 1 cup tomatoes, chopped
  • 1/2 cup hummus
  • 1/4 cup reduced-fat feta cheese, crumbled

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat until shimmering.
  2. Add the ground chicken to the skillet and cook for about 5-6 minutes until no longer pink.
  3. Stir in the parsley, garlic, cumin, coriander, dried mint, red pepper flakes, cinnamon, and allspice. Season with salt and pepper and cook for an additional 2-3 minutes.
  4. Assemble the bowls starting with a base of brown rice, topped with the chicken kofta mixture, cucumbers, tomatoes, hummus, and feta cheese.
  5. Serve and enjoy!

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. You can prepare the kofta mixture a day in advance.
