- 1 lb boneless skinless chicken breasts (or thighs), cut into chunks
- 1 tsp garlic powder
- 1 tsp dried parsley
- 1 small onion, chopped
- 3 garlic cloves, minced
- ½ tsp salt (adjust to taste)
- ½ tsp freshly ground black pepper
- 12 oz penne pasta
- 2 ½ cups low-sodium chicken broth
- 1 cup milk (any kind, including plant-based)
- ½ cup grated Parmesan cheese
- 2 tbsp fresh chopped parsley
- 1 tbsp unsalted butter (for toasting breadcrumbs)
- ½ cup breadcrumbs
- 1 tsp garlic powder (for the breadcrumb topping)
- 1 tbsp dried parsley (for the breadcrumb topping)
Instructions
- In a large skillet or Dutch oven, heat 1 tbsp olive oil and 1 tbsp unsalted butter over medium heat. Season chicken chunks with garlic powder and dried parsley, then sauté for about 5-7 minutes until golden and cooked through.
- Add chopped onion and minced garlic to the skillet. Cook for 2-3 minutes until softened, seasoning with salt and pepper.
- Add penne pasta, chicken broth, and milk to the skillet. Stir and bring to a gentle boil. Reduce heat and let simmer uncovered for 15 minutes or until pasta is al dente, stirring occasionally.
- Stir in grated Parmesan cheese and fresh parsley, then remove from heat.
- In a separate skillet, melt the remaining 1 tbsp of butter. Add breadcrumbs, garlic powder, and dried parsley. Toast for about 3-5 minutes until golden and crispy.
- Sprinkle the crispy breadcrumb topping over the Chicken Kiev Pasta and serve hot.
