Description

A hearty and flavorful soup featuring tender chicken gizzards, earthy mushrooms, and aromatic vegetables in a rich broth. This comforting dish is packed with protein and umami flavors, perfect for cold days or as a nourishing meal.


Ingredients

  • 1 lb chicken gizzards
  • 2 dry white mushrooms
  • 1/2 cup white rice
  • 2 medium potatoes
  • 1/2 large onion
  • 1 medium carrot
  • 3 tbsp oil
  • 2 tbsp fresh parsley
  • 2 tbsp green onions
  • 1/2 tbsp salt
  • 1 tsp pepper
  • 2-3 bay leaves

Instructions

  1. Rinse gizzards thoroughly and pat dry. Cut into bite-sized pieces if large.
  2. Heat oil in a large pot over medium-high heat. Brown gizzards for 5-6 minutes. Remove and set aside.
  3. In the same pot, sauté onions, carrots, and celery for 5 minutes until softened.
  4. Add garlic and mushrooms, cook for another 3 minutes until mushrooms release their liquid.
  5. Return gizzards to the pot. Add bay leaf, thyme, chicken stock, soy sauce, and Worcestershire sauce.
  6. Bring to a boil, then reduce heat to low. Simmer covered for 1-1.5 hours until gizzards are tender.
  7. Season with salt and pepper to taste. Stir in parsley and lemon juice just before serving.
  8. Remove bay leaf and serve hot with crusty bread.

Notes

  • For extra tender gizzards, pressure cook for 20 minutes before adding to soup.
  • Add 1/2 cup pearl barley or diced potatoes for a heartier version.
  • Garnish with a dollop of sour cream for a creamy variation.
  • Leftovers taste even better the next day as flavors develop.
