Description
A hearty and flavorful soup featuring tender chicken gizzards, earthy mushrooms, and aromatic vegetables in a rich broth. This comforting dish is packed with protein and umami flavors, perfect for cold days or as a nourishing meal.
Ingredients
- 1 lb chicken gizzards
- 2 dry white mushrooms
- 1/2 cup white rice
- 2 medium potatoes
- 1/2 large onion
- 1 medium carrot
- 3 tbsp oil
- 2 tbsp fresh parsley
- 2 tbsp green onions
- 1/2 tbsp salt
- 1 tsp pepper
- 2-3 bay leaves
Instructions
- Rinse gizzards thoroughly and pat dry. Cut into bite-sized pieces if large.
- Heat oil in a large pot over medium-high heat. Brown gizzards for 5-6 minutes. Remove and set aside.
- In the same pot, sauté onions, carrots, and celery for 5 minutes until softened.
- Add garlic and mushrooms, cook for another 3 minutes until mushrooms release their liquid.
- Return gizzards to the pot. Add bay leaf, thyme, chicken stock, soy sauce, and Worcestershire sauce.
- Bring to a boil, then reduce heat to low. Simmer covered for 1-1.5 hours until gizzards are tender.
- Season with salt and pepper to taste. Stir in parsley and lemon juice just before serving.
- Remove bay leaf and serve hot with crusty bread.
Notes
- For extra tender gizzards, pressure cook for 20 minutes before adding to soup.
- Add 1/2 cup pearl barley or diced potatoes for a heartier version.
- Garnish with a dollop of sour cream for a creamy variation.
- Leftovers taste even better the next day as flavors develop.
