- 4 boneless, skinless chicken breasts or thighs
- Salt and pepper, to taste
- 1 tsp Italian seasoning
- 1 tbsp olive oil
- 1 tbsp unsalted butter
- 2–3 garlic cloves, minced
- ½ cup chicken broth
- ½ cup heavy cream (or half-and-half)
- ½ cup grated Parmesan cheese
- 6 cups fresh spinach
Instructions
- Season the chicken with salt, pepper, and Italian seasoning.
- In a skillet, heat olive oil and butter over medium heat.
- Sear the chicken for 4-5 minutes on each side until golden brown and cooked through.
- Remove chicken and set aside.
- Sauté minced garlic in the skillet for 30 seconds until fragrant.
- Add chicken broth, deglazing the pan and letting it simmer for 2 minutes.
- Stir in heavy cream and Parmesan cheese until the sauce is smooth.
- Toss in fresh spinach, stirring until wilted.
- Return chicken to the skillet, spooning sauce over it and simmering for an additional 5 minutes.
- Serve hot with rice, pasta, or bread.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. This dish can be frozen for up to 3 months. If your sauce is too thick, add a splash of chicken broth or cream to adjust consistency.
