Description

A comforting Italian dish featuring tender chicken and a rich creamy spinach sauce, perfect for any occasion.


Ingredients

  • 4 boneless, skinless chicken breasts or thighs
  • Salt and pepper, to taste
  • 1 tsp Italian seasoning
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 23 garlic cloves, minced
  • ½ cup chicken broth
  • ½ cup heavy cream (or half-and-half)
  • ½ cup grated Parmesan cheese
  • 6 cups fresh spinach

Instructions

  1. Season the chicken with salt, pepper, and Italian seasoning.
  2. In a skillet, heat olive oil and butter over medium heat.
  3. Sear the chicken for 4-5 minutes on each side until golden brown and cooked through.
  4. Remove chicken and set aside.
  5. Sauté minced garlic in the skillet for 30 seconds until fragrant.
  6. Add chicken broth, deglazing the pan and letting it simmer for 2 minutes.
  7. Stir in heavy cream and Parmesan cheese until the sauce is smooth.
  8. Toss in fresh spinach, stirring until wilted.
  9. Return chicken to the skillet, spooning sauce over it and simmering for an additional 5 minutes.
  10. Serve hot with rice, pasta, or bread.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. This dish can be frozen for up to 3 months. If your sauce is too thick, add a splash of chicken broth or cream to adjust consistency.
