Description

A vibrant salad combining crunchy cashews, tender chicken, and fresh veggies, all dressed in a creamy tahini dressing. Perfect for any occasion!


Ingredients

  • 5 heaping cups chopped Napa cabbage
  • 2 cups shredded rotisserie chicken
  • 1 cup shredded (matchstick) carrots
  • ¾ cup finely chopped green onions
  • ¾ cup roasted, salted cashews
  • ¼ cup finely chopped fresh cilantro
  • 2 Tbsp toasted sesame seeds
  • ¼ cup tahini
  • 2 Tbsp low-sodium tamari
  • 2 Tbsp rice vinegar
  • 1 Tbsp maple syrup
  • 1 Tbsp toasted sesame oil
  • 1 large garlic clove, grated or finely minced

Instructions

  1. In a jar or measuring cup, combine tahini, tamari, rice vinegar, maple syrup, sesame oil, and garlic. Whisk until smooth and creamy.
  2. In a large bowl, toss together the chopped cabbage, shredded chicken, shredded carrots, green onions, cashews, cilantro, and a pinch of salt.
  3. Pour the dressing over the salad mixture and toss thoroughly to combine.
  4. Enjoy immediately or refrigerate in an airtight container for up to 2 days.
