Ingredients
Scale
- 4 boneless, skinless chicken breasts (about 6 oz each)
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp Italian seasoning
- 2 tbsp olive oil
- 2 large tomatoes, sliced 1/4-inch thick
- 8 oz fresh mozzarella cheese, sliced
- 1/4 cup fresh basil leaves
- 2 tbsp balsamic glaze
- 1 clove garlic, minced
- 1 tsp honey (optional, to sweeten glaze)
Instructions
- Prep chicken: Pound chicken breasts to even thickness (about 1/2-inch). Season both sides with salt, pepper, and Italian seasoning.
- Cook chicken: Heat olive oil in large skillet over medium-high heat. Add chicken and cook 5-6 minutes per side until golden brown and internal temperature reaches 165°F. Remove from pan and keep warm.
- Assemble: Top each chicken breast with 2-3 tomato slices and 2 oz mozzarella. Cover skillet and let cheese melt for 1-2 minutes (or broil 1-2 minutes if needed).
- Finish: Garnish with fresh basil leaves and drizzle with balsamic glaze.
- Serve: Pair with a side of pasta, roasted potatoes, or a fresh green salad.
Notes
- For extra flavor: Marinate chicken in 1 tbsp balsamic vinegar + 1 tbsp olive oil for 30 minutes before cooking.
- Vegetarian option: Substitute chicken with thick portobello mushroom caps.
- Make ahead: Prep ingredients in advance but assemble just before serving.
- Storage: Best eaten fresh but keeps refrigerated for 2 days (reheat gently).
