- For the Caesar Dressing:
- 1/2 cup mayonnaise
- 3 tbsp Greek yogurt
- 1 tsp Dijon mustard
- 1 tsp Worcestershire sauce
- 2 tbsp lemon juice
- 1/4 cup grated Parmesan cheese
- 1–2 garlic cloves, minced
- 1/4 tsp black pepper
- Pinch of sea salt
- For the Chicken:
- 4 chicken cutlets
- Sea salt and black pepper to taste
- Vegetable oil for frying
- For Breading:
- 1/3 cup all-purpose flour
- 1/2 tsp salt
- 3/4 tsp smoked paprika
- 2 eggs
- 1/4 tsp salt
- 3/4 cup panko breadcrumbs
- 1/4 cup regular breadcrumbs
- 1 tsp dried parsley
- 1/2 tsp black pepper
- 1/2 tsp sea salt
- 1/2 tsp dried oregano
- 1 tsp garlic powder
- 1/4 cup grated Parmesan cheese
- For Assembly:
- 2 romaine hearts, chopped
- 1 French baguette
- Additional Parmesan cheese for garnish
Instructions
- Prepare dressing by combining mayonnaise, Greek yogurt, Dijon mustard, Worcestershire sauce, lemon juice, Parmesan, garlic, pepper, and salt. Refrigerate.
- Season chicken cutlets with salt and pepper. Pound to even thickness if needed.
- Set up breading station: flour with salt and paprika in first plate, beaten eggs with salt in second, and combined breadcrumbs, herbs, spices, and Parmesan in third.
- Dredge chicken in flour, dip in egg, then coat in breadcrumb mixture.
- Heat oil in pan over medium heat. Fry chicken for 4-5 minutes per side until golden and cooked through.
- Slice baguette into 5-inch pieces and cut open. Spread dressing on bread, add chicken, top with dressed romaine lettuce, and sprinkle with Parmesan.
- Serve immediately.

- Use room temperature ingredients for best mixing results.
- Don’t overcrowd the pan when frying chicken to ensure even cooking.
- Assemble sandwiches just before serving to prevent sogginess.
