- 1 1/2 cups white rice, uncooked
- 3 cups broccoli florets, chopped
- 1 (10.5 oz) can cream of chicken soup
- 1 (10.5 oz) can cream of mushroom soup
- 1 1/2 cups chicken broth
- 1 cup sour cream
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup crushed Ritz crackers or breadcrumbs
- 2 tbsp butter, melted
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- Combine ingredients: In a large bowl, mix together chicken, uncooked rice, broccoli, both soups, chicken broth, sour cream, 1 cup cheddar cheese, Parmesan cheese, and all seasonings until well blended.
- Transfer to baking dish: Pour mixture into prepared dish and spread evenly.
- Add topping: Mix crushed crackers with melted butter and remaining 1/2 cup cheddar cheese. Sprinkle evenly over casserole.
- Bake: Cover with foil and bake for 45 minutes. Remove foil and bake 15-20 more minutes until bubbly and golden brown.
- Rest: Let stand 10 minutes before serving to allow sauce to thicken.
