Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 3 minutes).
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In another bowl, whisk together the flour, baking soda, and salt. Gradually blend into the butter mixture until a soft dough forms.
- Fold in the chocolate chips, dried cherries, pecans, and shredded coconut.
- Drop tablespoonfuls of dough onto ungreased cookie sheets, spaced about 2 inches apart.
- Bake for 10-12 minutes until edges are golden brown and centers look set.
- Allow to cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.
