- 1/4 cup unsweetened cocoa powder

- 1/4 cup brown sugar
- 1/3 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together the flour, baking powder, salt, and cocoa powder. Set aside.
- In another bowl, mix the granulated sugar, brown sugar, and vegetable oil until well combined.
- Add the egg and vanilla extract, whisking until smooth.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Fold in the chopped pistachios and dried cherries.
- Chill the dough in the refrigerator for about 30 minutes.
- Scoop tablespoon-sized balls of dough and roll them in powdered sugar.
- Place them on the prepared baking sheet about 2 inches apart.
- Bake for 10-12 minutes, ensuring the edges look set while the centers remain soft.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Store in an airtight container for up to a week, or freeze for up to three months. For variations, use other nuts or add spices.
