Ingredients
– 2 cups Rolled Oats (Old-Fashioned)
– 1 cup Almond Flour
– 1/2 cup Unsweetened Shredded Coconut
– 1/2 teaspoon Sea Salt
– 1 cup Dried Tart Cherries
– 1 cup Creamy Almond Butter
– 1/2 cup Pure Maple Syrup
– 1/4 cup Melted Coconut Oil
– 1 teaspoon Vanilla Extract
– 1 1/2 cups Dark Chocolate Chips or a Chopped Chocolate Bar
– 1/4 cup Full-Fat Coconut Milk (from a can)
Instructions
- Preheat oven to 350°F (175°C). Grease an 8×8 inch baking pan and line with parchment paper.
- In a large bowl, combine oats, flour, brown sugar, baking soda, and salt.
- Add melted butter and mix until the mixture is crumbly but holds together when pressed.
- Reserve 1 cup of the oat mixture for the topping. Press the remaining mixture firmly into the bottom of the prepared pan.
- Spread cherry preserves evenly over the crust.
- Sprinkle the reserved oat mixture over the cherry layer. If using, add sliced almonds on top.
- Bake for 25-30 minutes, or until the top is golden brown.
- Let cool completely in the pan on a wire rack.
- For the ganache, heat heavy cream until just boiling. Pour over chocolate chips in a bowl and let sit for 2 minutes. Stir until smooth.
- Drizzle the chocolate ganache over the cooled bars. Allow the ganache to set before cutting into squares.
Notes
- For a healthier version, use whole wheat flour and reduce the sugar by 1/4 cup.
- If using cherry pie filling, drain excess liquid to prevent soggy bars.
- Store in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
- These bars freeze well. Wrap individually and freeze for up to 2 months.
