Description

Cherry Oat Bars with Chocolate Ganache are a delicious and wholesome treat featuring a chewy oat base, a layer of sweet cherry filling, and a rich chocolate ganache topping. Perfect for breakfast, snacks, or dessert, these bars are both satisfying and indulgent.


Ingredients

– 2 cups Rolled Oats (Old-Fashioned)
– 1 cup Almond Flour
– 1/2 cup Unsweetened Shredded Coconut
– 1/2 teaspoon Sea Salt
– 1 cup Dried Tart Cherries
– 1 cup Creamy Almond Butter
– 1/2 cup Pure Maple Syrup
– 1/4 cup Melted Coconut Oil
– 1 teaspoon Vanilla Extract
– 1 1/2 cups Dark Chocolate Chips or a Chopped Chocolate Bar
– 1/4 cup Full-Fat Coconut Milk (from a can)


Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8×8 inch baking pan and line with parchment paper.
  2. In a large bowl, combine oats, flour, brown sugar, baking soda, and salt.
  3. Add melted butter and mix until the mixture is crumbly but holds together when pressed.
  4. Reserve 1 cup of the oat mixture for the topping. Press the remaining mixture firmly into the bottom of the prepared pan.
  5. Spread cherry preserves evenly over the crust.
  6. Sprinkle the reserved oat mixture over the cherry layer. If using, add sliced almonds on top.
  7. Bake for 25-30 minutes, or until the top is golden brown.
  8. Let cool completely in the pan on a wire rack.
  9. For the ganache, heat heavy cream until just boiling. Pour over chocolate chips in a bowl and let sit for 2 minutes. Stir until smooth.
  10. Drizzle the chocolate ganache over the cooled bars. Allow the ganache to set before cutting into squares.

Notes

  • For a healthier version, use whole wheat flour and reduce the sugar by 1/4 cup.
  • If using cherry pie filling, drain excess liquid to prevent soggy bars.
  • Store in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
  • These bars freeze well. Wrap individually and freeze for up to 2 months.
