- 1 can (21 ounces) cherry pie filling or homemade (about 2 cups)
- 1 cup (125 g) all-purpose flour
- 2/3 cup (133 g) granulated sugar
- 6 tablespoons light brown sugar
- 1/2 teaspoon kosher salt
- 1/2 cup (113 g) unsalted butter, melted and cooled slightly
- 1 cup (125 g) confectioners’ sugar
- 1 tablespoon whole milk
- 1/4 teaspoon almond extract
Instructions
- Activate the yeast: In a large bowl, combine warm water, sugar, and yeast. Let it rest for 5 minutes until foamy.
- Mix wet ingredients: Pour half the oil into the yeast mixture and set the other half aside for greasing the pizza pan.
- Combine dry ingredients: Add the flour and salt, stirring until a soft, sticky dough forms.
- Transfer the dough to a greased bowl, cover with a towel, and let it rise in a warm place for about 1 hour until it doubles in size.
- Preheat the oven to 450°F (232°C) and line a pizza pan with parchment paper.
- Pour the remaining oil onto the pizza pan, transfer the dough, and press it to the edges. Bake for about 10 minutes until lightly golden.
- Prepare the topping: Mix melted butter and sugar in a bowl, then brush this mixture over the baked crust and spread the cherry filling.
- Make the crumble: In another bowl, mix flour, sugars, and salt, then stir in melted butter until clumpy. Sprinkle over the cherry filling.
- Return the pizza to the oven and bake for an additional 13-15 minutes until golden.
- Whisk glaze ingredients in a small bowl until smooth. Drizzle over the warm cherry pizza, then cool for 5-10 minutes before slicing.
