  • 1 teaspoon active dry yeast
  • 1/3 cup (75 g) vegetable oil, divided
  • 2 1/2 cups (312.5 g) all-purpose flour
  • 1 teaspoon kosher salt
  • 3 tablespoons unsalted butter, melted
  • 3 tablespoons granulated sugar
  • 1 can (21 ounces) cherry pie filling or homemade (about 2 cups)
  • 1 cup (125 g) all-purpose flour
  • 2/3 cup (133 g) granulated sugar
  • 6 tablespoons light brown sugar
  • 1/2 teaspoon kosher salt
  • 1/2 cup (113 g) unsalted butter, melted and cooled slightly
  • 1 cup (125 g) confectioners’ sugar
  • 1 tablespoon whole milk
  • 1/4 teaspoon almond extract

Instructions

  1. Activate the yeast: In a large bowl, combine warm water, sugar, and yeast. Let it rest for 5 minutes until foamy.
  2. Mix wet ingredients: Pour half the oil into the yeast mixture and set the other half aside for greasing the pizza pan.
  3. Combine dry ingredients: Add the flour and salt, stirring until a soft, sticky dough forms.
  4. Transfer the dough to a greased bowl, cover with a towel, and let it rise in a warm place for about 1 hour until it doubles in size.
  5. Preheat the oven to 450°F (232°C) and line a pizza pan with parchment paper.
  6. Pour the remaining oil onto the pizza pan, transfer the dough, and press it to the edges. Bake for about 10 minutes until lightly golden.
  7. Prepare the topping: Mix melted butter and sugar in a bowl, then brush this mixture over the baked crust and spread the cherry filling.
  8. Make the crumble: In another bowl, mix flour, sugars, and salt, then stir in melted butter until clumpy. Sprinkle over the cherry filling.
  9. Return the pizza to the oven and bake for an additional 13-15 minutes until golden.
  10. Whisk glaze ingredients in a small bowl until smooth. Drizzle over the warm cherry pizza, then cool for 5-10 minutes before slicing.
