Description
Homemade cherry cordials featuring sweet maraschino cherries enveloped in a creamy fondant center and dipped in rich chocolate. These decadent candies make perfect holiday gifts or special treats.

- For the Fondant:
- 2 cups powdered sugar
- 2 tbsp maraschino cherry juice
- 1 tbsp light corn syrup
- 1 tbsp butter, softened
- 1/4 tsp vanilla extract
- For Assembly:
- 36 maraschino cherries with stems, well-drained
- 12 oz dark chocolate or chocolate almond bark
- 1 tbsp shortening (optional, for thinning chocolate)
Instructions
- Make fondant: Mix powdered sugar, cherry juice, corn syrup, butter and vanilla until smooth and kneadable. If too dry, add more juice 1/2 tsp at a time.
- Shape centers: Roll fondant into 36 small balls (about 1 tsp each). Flatten each ball and wrap around a cherry, sealing completely.
- Chill: Place wrapped cherries on parchment-lined tray and freeze for 30 minutes.
- Melt chocolate: In double boiler, melt chocolate with shortening (if using) until smooth.
- Dip cherries: Using stems, dip each cherry into chocolate, letting excess drip off. Place on parchment.
- Set: Let chocolate harden at room temperature (about 1 hour) or refrigerate for 15 minutes.
- Store: Keep in airtight container at room temperature for up to 2 weeks.
Notes
- For alcohol-infused version: soak drained cherries in 1 tbsp kirsch or brandy for 1 hour before wrapping
- Use high-quality chocolate for best results
- If stems break, use toothpicks for dipping
- The fondant will liquefy around the cherry after 2-3 days, creating the classic cordial center
