    • 2 cups powdered sugar
    • 2 tbsp maraschino cherry juice
    • 1 tbsp light corn syrup
    • 1 tbsp butter, softened
    • 1/4 tsp vanilla extract
  • For Assembly:
    • 36 maraschino cherries with stems, well-drained
    • 12 oz dark chocolate or chocolate almond bark
    • 1 tbsp shortening (optional, for thinning chocolate)

Instructions

  1. Make fondant: Mix powdered sugar, cherry juice, corn syrup, butter and vanilla until smooth and kneadable. If too dry, add more juice 1/2 tsp at a time.
  2. Shape centers: Roll fondant into 36 small balls (about 1 tsp each). Flatten each ball and wrap around a cherry, sealing completely.
  3. Chill: Place wrapped cherries on parchment-lined tray and freeze for 30 minutes.
  4. Melt chocolate: In double boiler, melt chocolate with shortening (if using) until smooth.
  5. Dip cherries: Using stems, dip each cherry into chocolate, letting excess drip off. Place on parchment.
  6. Set: Let chocolate harden at room temperature (about 1 hour) or refrigerate for 15 minutes.
  7. Store: Keep in airtight container at room temperature for up to 2 weeks.

Notes

  • For alcohol-infused version: soak drained cherries in 1 tbsp kirsch or brandy for 1 hour before wrapping
  • Use high-quality chocolate for best results
  • If stems break, use toothpicks for dipping
  • The fondant will liquefy around the cherry after 2-3 days, creating the classic cordial center
