Ingredients

  • 1/4 cup cherry purée

Instructions

  1. Prepare the Ingredients: Sift almond flour and powdered sugar together.
  2. Whip the Egg Whites: Whip egg whites and salt until soft peaks form. Add granulated sugar and whip until stiff peaks form.
  3. Combine Dry Ingredients: Whisk almond flour, powdered sugar, cocoa powder, and salt in a separate bowl.
  4. Fold Mixtures: Gently fold dry ingredients into whipped egg whites.
  5. Pipe the Macarons: Transfer the batter to a piping bag and pipe 1.5-inch circles on a baking sheet.
  6. Rest the Macarons: Let sit for 30-60 minutes until a skin forms.
  7. Bake: Preheat oven to 300°F (150°C) and bake for 15-18 minutes.
  8. Prepare the Ganache: Heat heavy cream, pour over chocolate, and add cherry purée.
  9. Assemble: Pair macaron shells and pipe ganache between them.
