- 4 boneless, skinless chicken breasts
- 1 cup shredded mozzarella cheese
- 1 cup sun-dried tomatoes, chopped
- 1/2 cup fresh basil leaves, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- Olive oil for searing
Instructions
- Preheat your oven to 375°F (190°C).
- Combine mozzarella, sun-dried tomatoes, basil, garlic, salt, and pepper in a bowl.
- Prepare the chicken breasts by creating a pocket in each one.
- Stuff each chicken breast with the cheese mixture.
- Sear the chicken in olive oil for 2-3 minutes on each side until golden brown.
- Transfer to a baking dish and bake for 25-30 minutes until cooked through.
- Serve hot and enjoy!
