Ingredients

  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup diced tomatoes (canned)
  • 4 oz cream cheese (softened)
  • 1 cup shredded cheddar cheese
  • 1/2 cup chicken broth (low-sodium)

Instructions

  1. Cook the pasta in salted boiling water until al dente, about 8-10 minutes, then drain.
  2. In a large skillet, brown the ground beef or turkey over medium heat for about 5-7 minutes.
  3. Add taco seasoning and diced tomatoes; simmer for 5 minutes.
  4. Reduce heat and stir in cream cheese and chicken broth until smooth.
  5. Toss the cooked pasta into the skillet to coat it with the sauce.
  6. Top with shredded cheddar, cover, and let sit for about 5 minutes until the cheese melts.
