A one-pan wonder featuring tender chicken and crispy potatoes baked in a creamy, cheesy garlic Parmesan sauce. This hearty and comforting meal is easy to make and perfect for weeknight dinners.
Ingredients
For the Chicken & Potatoes:
- 4 boneless, skinless chicken thighs or breasts
- 4 medium Yukon Gold potatoes
- 3 tbsp olive oil
- Salt and pepper
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp Italian seasoning
For the Garlic Parmesan Sauce:
- 4 cloves garlic
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1/4 cup chopped fresh parsley
Instructions
- Preheat oven to 400°F (200°C).
- Season chicken breasts with salt, pepper, and paprika. Set aside.
- In a large oven-safe skillet, heat olive oil over medium-high heat. Add chicken and sear for 3-4 minutes per side until golden brown. Remove chicken and set aside.
- In the same skillet, add the potatoes and cook for 5 minutes, stirring occasionally, until they start to brown.
- Add minced garlic and cook for 1 minute until fragrant.
- Pour in chicken broth to deglaze the pan, scraping up any browned bits.
- Add heavy cream, 3/4 cup Parmesan cheese, Italian seasoning, salt, and pepper. Stir to combine.
- Return chicken to the skillet, nestling it among the potatoes. If using, add spinach around the edges.
- Sprinkle remaining 1/4 cup Parmesan cheese over the top.
- Transfer skillet to the oven and bake for 25-30 minutes, or until chicken is cooked through (165°F) and potatoes are tender.
- Garnish with fresh parsley before serving.
Notes
- For even cooking, ensure chicken breasts are of similar thickness. You can pound them to an even 1-inch thickness if needed.
- If you don’t have an oven-safe skillet, transfer everything to a baking dish before going into the oven.
- For a lighter version, substitute half-and-half for heavy cream.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or on the stovetop.
