Description

A one-pan wonder featuring tender chicken and crispy potatoes baked in a creamy, cheesy garlic Parmesan sauce. This hearty and comforting meal is easy to make and perfect for weeknight dinners.


Ingredients

For the Chicken & Potatoes:

  • 4 boneless, skinless chicken thighs or breasts
  • 4 medium Yukon Gold potatoes
  • 3 tbsp olive oil
  • Salt and pepper
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp Italian seasoning

For the Garlic Parmesan Sauce:

  • 4 cloves garlic
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Season chicken breasts with salt, pepper, and paprika. Set aside.
  3. In a large oven-safe skillet, heat olive oil over medium-high heat. Add chicken and sear for 3-4 minutes per side until golden brown. Remove chicken and set aside.
  4. In the same skillet, add the potatoes and cook for 5 minutes, stirring occasionally, until they start to brown.
  5. Add minced garlic and cook for 1 minute until fragrant.
  6. Pour in chicken broth to deglaze the pan, scraping up any browned bits.
  7. Add heavy cream, 3/4 cup Parmesan cheese, Italian seasoning, salt, and pepper. Stir to combine.
  8. Return chicken to the skillet, nestling it among the potatoes. If using, add spinach around the edges.
  9. Sprinkle remaining 1/4 cup Parmesan cheese over the top.
  10. Transfer skillet to the oven and bake for 25-30 minutes, or until chicken is cooked through (165°F) and potatoes are tender.
  11. Garnish with fresh parsley before serving.

Notes

  • For even cooking, ensure chicken breasts are of similar thickness. You can pound them to an even 1-inch thickness if needed.
  • If you don’t have an oven-safe skillet, transfer everything to a baking dish before going into the oven.
  • For a lighter version, substitute half-and-half for heavy cream.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or on the stovetop.
