Cheesy Ranch Potato Bake is a creamy, indulgent side dish featuring sliced potatoes baked with a rich ranch seasoning, melted cheeses, and a tangy sour cream sauce. Perfect for family dinners, potlucks, or as a comforting side for any occasion.

- 4 medium Russet potatoes, sliced into 1/4-inch rounds
- 2 tbsp ranch seasoning mix
- 2 tbsp olive oil
- 1 cup sharp cheddar cheese, shredded
- 1 cup mozzarella cheese, shredded
- 1 cup sour cream
- 1/2 cup mayonnaise
- 2 tbsp green onions, chopped
- 1/4 cup bacon bits (optional)
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss potato slices with olive oil and ranch seasoning until evenly coated.
- Arrange half of the potatoes in a greased baking dish. Sprinkle with half of the cheddar and mozzarella cheeses.
- Repeat with remaining potatoes and cheeses.
- In a small bowl, mix sour cream and mayonnaise. Spread over the top layer of potatoes.
- Cover with foil and bake for 25 minutes. Remove foil and bake for another 10-15 minutes until potatoes are tender and top is golden.
- Garnish with green onions and bacon bits before serving.
Notes
- For a crispier top, broil for the last 2-3 minutes.
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
- For a lighter version, use Greek yogurt instead of sour cream and light mayonnaise.
- Add diced jalapeños for a spicy kick.
